Jay Bickford attended Roosevelt High School and lived in Hyde Park, New York. He earned first team all-conference, all-county and all-section honors, was named 1994 defensive player of the team, and was named team captain during his junior and senior years. He recorded 78 tackles, 11.5 sacks, two fumble recoveries and one forced fumble as a senior, finishing with 196 tackles and 19 sacks. He set the school record for sacks in a season as a senior, and also lettered in track and field.

At Iowa, he was named defensive scout team MVP vs. Michigan State in 1995. He moved from defensive line to center prior to the start of the 1997 spring practice, and was named offensive scout team MVP vs. Northern Iowa in 1997.

In 1998, he played in every game as right or left guard, starting in two games. In 1999, he started every game at left guard until suffering an ankle sprain and Achilles tendon injury against Penn State.

He earned Academic All-Big Ten in 1998 and 1999.

He earned his undergraduate and graduate degrees as a player, and later earned his PhD from Iowa in 2009. He is currently a Professor of Social Studies/History Education at Eastern Illinois University.
