Eric McCollom attended Camden High School and lived in Camden, South Carolina. He was named Mr. Football in South Carolina as a senior, and first team all-state honors as a junior and a senior and named regional player of the year as a senior. He passed for over 3,000 yards as a senior and set single-season state record with 43 TD passes, and overall passed for 6,345 yards and threw 72 touchdowns as a two-year starter.

At Iowa, he played sparingly at QB in his first two seasons before switching to wide receiver. After the 2006 season, he transferred to Newberry College in South Carolina, where he recorded 1385 yards on 98 completions of 165 attempts with 13 touchdowns and 2 interceptions during the 2007 and 2008 seasons. He only played three games of the 2007 season due to a season-ending knee surgery.
